Ingredients
Scale
- 1 pound ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 packet taco seasoning
- 9 lasagna noodles, cooked
- 2 cups shredded cheddar cheese
- 1 can refried beans
- 1 cup salsa
- 1 cup sour cream
- Fresh cilantro, for garnish
Instructions
- Heat a skillet over medium heat. Add the ground beef, chopped onion, and bell pepper. Cook until the beef is browned and the vegetables are tender, about 5-7 minutes. Drain excess fat.
- Add taco seasoning to the cooked beef and follow package instructions, adding water and simmering for about 5 minutes.
- Preheat your oven to 350°F (175°C). In a greased baking dish, spread a layer of refried beans, followed by three lasagna noodles. Add half of the seasoned beef mixture and a third of the salsa. Repeat layers, finishing with a layer of noodles on top, then spread sour cream and sprinkle cheddar cheese on top.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until the cheese is melted and bubbly. Garnish with fresh cilantro before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- You can prepare the layers in advance and refrigerate until ready to bake.
- Consider using whole wheat noodles or low-fat meat for healthier alternatives.
- Allow the lasagna to sit for 10 minutes after baking to set before cutting.
