Copycat Subway Italian Herb & Cheese Bread: A homemade delight packed with Italian flavors and a cheesy infusion perfect for sandwiches.

- 3 cups all-purpose flour
- 1 cup warm water (about 110°F or 43°C)
- 2 ¼ tsp active dry yeast (1 packet)
- 1 tbsp sugar
- 1 tsp salt
- 2 tbsp olive oil
- 1 tbsp Italian seasoning
- ½ cup shredded cheese (mozzarella or provolone)
- Additional herbs for topping (optional)
Instructions
- In a large mixing bowl, combine warm water and sugar. Sprinkle yeast on top and let sit for 5-10 minutes until frothy.
- Add flour, salt, olive oil, and Italian seasoning, mixing well to form a dough.
- Transfer dough to a floured surface and knead for 8-10 minutes until smooth and elastic, incorporating shredded cheese.
- Place kneaded dough in a greased bowl, cover, and allow to rise in a warm area for about 1 hour until doubled in size.
- Punch down the dough, shape into loaves, and place on a baking sheet lined with parchment paper. Brush tops with olive oil and sprinkle with herbs.
- Preheat oven to 375°F (190°C) and bake loaves for 25-30 minutes until golden brown and hollow sounding when tapped.
- Let bread cool on a wire rack before slicing.
Notes
- Store in an airtight container at room temperature for up to 3 days.
- For longer storage, slice, wrap tightly in plastic wrap and freeze for up to 3 months.
- For a stronger flavor, add more herbs or different types of cheese.
