- 2 medium zucchinis, shredded
- 1 teaspoon salt
- 1 large egg
- 1/2 cup all-purpose flour
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon garlic powder
- Oil for frying
- Dipping sauce (optional)
Instructions
- Shred the zucchinis and sprinkle with salt. Let sit for 10 minutes to draw out moisture.
- After 10 minutes, squeeze out excess moisture using a paper towel.
- In a bowl, mix the drained zucchini with egg, flour, Parmesan cheese, parsley, and garlic powder.
- Heat oil in a frying pan. Drop spoonfuls of the mixture, flatten, and cook for 3-4 minutes on each side until golden brown.
- Remove from the pan and place on a paper towel-lined plate. Serve hot with your favorite dipping sauce.

- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For longer storage, freeze cooked fritters and reheat in the oven.
