- 2 cups water
- 1 medium cucumber, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse the red lentils under cold water until the water runs clear.
- In a medium pot, bring 2 cups of water to a boil and add the rinsed lentils. Cook for 15-20 minutes until tender.
- Meanwhile, dice the cucumber and bell pepper, halve the cherry tomatoes, and finely chop the red onion and parsley.
- Once the lentils are cooked and slightly cooled, combine them with the vegetables in a large mixing bowl.
- Add crumbled feta cheese, olive oil, lemon juice, and season with salt and pepper.
- Mix well to ensure even distribution of flavors.
- Store in an airtight container for up to 3 days in the refrigerator, adding feta just before serving if desired.
- Serve as a main dish or a side dish with grilled meats, pita bread, or a light yogurt sauce.
