- 1 cup bell peppers, sliced (mixed colors)
- 1 cup onions, sliced
- 2 cups beef broth
- 1 cup provolone cheese, shredded
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Bring a large pot of salted water to a boil. Add cheese tortellini and cook according to package instructions until al dente.
- In a skillet, heat olive oil over medium heat. Add sliced bell peppers and onions, sautéing until tender, about 5-7 minutes. Season with salt and pepper.
- Push the vegetables to the side and add the thinly sliced beef. Cook until browned, about 5 minutes. Pour in the beef broth and simmer for 3-4 minutes.
- Drain the tortellini and add it to the skillet with the beef and vegetables. Stir in provolone cheese until melted and combined. Serve immediately, garnished with fresh parsley if desired.
