- 200g pasta of your choice (spaghetti, penne, etc.)
- 4 ripe tomatoes, diced
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 200ml cooking cream
- Salt and pepper to taste
- Fresh basil leaves for garnish
- Grated Parmesan cheese for serving (optional)
Instructions
- Prepare the tomatoes by dicing them into small cubes.
- In a skillet, heat olive oil and sautรฉ chopped onions until translucent, then add minced garlic.
- Cook pasta in a boiling salted water until al dente, then drain.
- Add diced tomatoes to the skillet and cook until softened, then stir in the cooking cream and simmer.
- Add the cooked pasta to the skillet, mixing well with the sauce, adding reserved pasta water as needed.
Notes
- For leftovers, store in an airtight container for up to 3 days.
- To reheat, add a splash of cream or water if needed.
- For a vegan version, use coconut cream or cashew cream and omit cheese.
